Pancake Day

Pancake day hasn’t really been on my mind since I moved back from England. It’s definitely not something we properly celebrate in Canada. Or maybe I should say it’s wasn’t something I was aware of until living in England. Sorry to any Canadians that have been on this pancake day train forever. Still, I will take every opportunity to celebrate a day that requires eating food! I mean technically it’s Shrove Tuesday but shhh we’re just going to eat pancakes. I decided to try out some healthy four ingredient vegan pancakes!

What You’ll Need:

  • 3 cups of Oatmeal
  • 2 Bananas
  • 2 Cup of Soy Milk (You can substitute any milk or milk substitute)
  • 1 tsp Baking Powder 

Grind up the oats in a food processor or a blender. Looking back I could have blended the oats a bit finer. It would have made for a smoother batter. Mix the baking powder into the oats. 

Mash up your bananas and add in whichever milk or milk substitute your heart desires. Now, I have never had gruel but I am pretty sure this is what it looks like. Truly such an unappealing looking batter.

Combine the dry ingredients into the wet ones. Aaaaaaaand it still looks like a gross gruel. But it’s going to work out! Grease up a frying pan cause we are making pancakes!

With everything going on with the gruel batter I was starting to get a bit nervous. Pancakes are really my mom’s speciality, She is the breakfast Queen, and I wanted to make her proud! But this first pancake was a ‘crispy’ disaster. I think it’s a first pancake thing they ALWAYS burn. Why? Why is this just a thing? Because after that first one they were lovely.

To top my pancakes sliced up a banana (healthy!) and then drizzled with Cajeta (not healthy!) Happy Pancake Day Everyone!
