Monster’s Inc Day!

Bless Instagram for bringing it to my attention that there is an unofficial Monsters Inc Day! February 3rd, 2019 is 2/3/19 or 2319! It’s a little confusing since we all write dates differently but there you have it 2319! Or 3219 to some but let’s ignore those people for today. I knew immediately that I wanted to do something since Monster’s Inc and Monster’s University are some of my favourite movies!

I’ve seen the recipe for lemon cake cookies kicking around for quite a while and it seemed easy enough to modify. Allow me to go off topic for another moment here to geek out a little bit. You could really use any boxed cake flavour you liked but I chose lemon just because I could hear the Abominable Snowman offering Mike and Sully lemon snow cones. It made me smile. But enough bunny trails lets get to it.

What You’ll Need:

  • 1 Box of Cake Mix
  • 1/3 Cup Oil
  • 2 Eggs
  • Green Food Colouring
  • Eye Sprinkles
  • Powdered Sugar (about a cup)
  • 2 Tsp Lemon Extract (this is optional but it boosts the flavour)

I generally don’t believe it when blogs try to tell me recipes are easy enough to just make up whenever you unexpectedly have people come over. Apparently, that just happens a lot in the lives of bloggers. Anyways this recipe is actually easy enough and yummy enough that I could make it up on the spot if I ever have surprise guests just pop over.  More likely I’ll just use this as a perfect ‘I want cookies but don’t want to put too much effort into making cookies’ then eat the whole batch by myself. Preheat your oven at 375 degrees.

Mix together the cake mix, oil, and eggs.

Add in the lemon extract and any food colouring you want to use. I had a mossy green colour. At first, I was concerned it was going to be too dark but once the cookies baked the colour lightened. Maybe keep this in mind if you choose to add colour to your cookies.

Roll the cake/cookie mixture into balls SMALLER than this. I made the first batch this size. For regular cookies this size is fine however for Mike Wazowski it works better to have them a little smaller. Once you have the balls the size you want them fill another bowl with the powdered sugar.

 

Roll each ball in the powdered sugar until they are completely covered. Place on a baking sheet with a couple inches between since these cookies expand. You don’t need to grease a baking sheet but I still used parchment paper because I didn’t want extra dishes. Before you bake the cookies place an eye sprinkle in the middle of each one and push down gently.

Bake for 6 minutes or until the bottoms just start to look a little golden. These cookies are crispy on the bottom and chewy in the middle! Hope you love the lemony chewy goodness as much as I do! and Happy Monster’s Inc Day!!
