Baked Oatmeal

I’ve never been much of a breakfast person. Comment if you also are all about the dinner food! My dad and I both prefer a cup of coffee until we get to have a fun meal like lunch! or better yet dinner! But I know too well how hangry I get and breakfast has begrudgingly become a part of my life. While I acknowledge I should eat breakfast it doesn’t mean I enjoy breakfast. Pretty please if you’ve got great brekkie ideas pass them on! I need all the helpful suggestions I can get. Eating oatmeal as a kid was always a stupid experience as a kid. I HATED it. I don’t know why but for some reason baking it makes me live oatmeal. Boil it no good. Bake it deliciousness! So here we go yummy baked oatmeal!

Much like regularly made oatmeal whats, a lovely perk about baked oatmeal is that you can pretty much endlessly customize it to the flavours you like. I am not a morning person. Pretty much a zombie when I wake up. The second great thing about baked oatmeal is that it lasts for several meals. Thank goodness that’s more days I don’t have to wake up and make breakfast before work. It’s also easy to make! Hooray, three great things about baked oatmeal!

What you’ll need:

  • 2 bananas (It’s better if they are ripe but not necessary.)
  • 1/4 cup honey (you could substitute and sweetener)
  • 1 cup milk (any type of milk will work like soy, coconut, etc)
  • 1 egg
  • 1 tsp vanilla
  • 1 cup rolled oats
  • 1/2 tsp baking powder
  • 1 tsp cinnamon

You can also add nuts, berries, chocolate chips, or whatever takes your fancy! I added blueberries. Preheat your over to 375 degrees and grease the pan you’ll be using. The mixture will fill a 9×9 pan or you could also make it in muffin tins.

First, you want to mash up your bananas! Let me tell you something I always thought a fork was sufficient to mash bananas. A potato masher works 100X better. I can never go back to my ignorant ways.

In separate bowls mix together the dry ingredients and the wet ingredients. The combine the two together! Easy peasy.  

Once all your ingredients are combined add in whatever extras you’d like! Pour into your greased pan and bake for about 20 minutes. Or until the baked oatmeal is golden brown on the top.

Allow to cool for 5-10 minutes then slice and serve!

I topped mine with some vanilla greek yoghurt and some extra blueberries. Super delicious. There was a lot left over which is perfect for letting me sleep in instead of waking up to make breakfast all the time.
