Easy Homemade Pickled Onions

First things first, I LOVE pickled anything! I could eat a whole jar of baby dill pickles with garlic. Not just any jar, the big jar from Superstore. All time favourite comfort food: cheese sandwich with pickles; favourite cocktail: caesars with extra pickled green beans; favourite weird snack that I’m not totally sure what it is: pickled beets…maybe? I’m pretty sure they’re pickled beets. You get my point. These pickled onions are super easy to make and super delicious to eat!

INGREDIENTS:

  • 1 Red Onion
  • 1 cup Water
  • 1/2 cup Apple Cider Vinegar
  • 1 tbsp Sugar
  • 1 1/2 tsp Salt
  • Garlic
  • Peppercorns
  • A Mason Jar with lid

Combine the water, vinegar, salt, and sugar in a bowl. Mix until the salt and sugar are completely dissolved. Next, slice up the red onion. The first time I made it I used a mandolin to get very thin slices. In my opinion, they were a little too thin. I wanted them a little thicker so I used a good old fashioned knife and hand-sliced the onion.

Throw all the sliced onion in a jar. There is no technique for this cause it’s literally the easiest thing in the world. Sprinkle a pinch of peppercorns on top and add a couple pieces of garlic. Pour the vinegar mix on top until the onions are covered.

Throw a lid on it and shake it up. Then cram that sucker in your already over-packed fridge.

Let it set for a day or two and they will be good to go! I eat way too much of this stuff. Moment of silence for the poor sucker that dates me next because this is a one way ticket to bad breath station. I put these on pretty much everything but it’s especially good on avocado toast and tacos.
