Cucumber Lemonade

It feels like it was such a long time ago but in reality, it wasn’t all that long ago I was on vacation. Sweet sweet vacation. Unsurprisingly one of my favourite parts of vacation is all the good food and drink. Calories don’t count on vacation right? On our way from one place to the next, we crashed in on the Cheesecake Factory. Side note if you know why The Cheesecake Factory decorates with faux Egyptian decor please let me know.

Regardless of decor, their cucumber lemonade is AMAZING! Refreshing and delicious. I’m not a huge fan of cucumbers unless they are pickled but this lemonade is everything.

INGREDIENTS:

-Cucumber

-Lemonade

If you want to you can make your own lemonade. I really didn’t want to do that but my cupboards were empty of concentrate. To make it just combine equal parts lemon juice and sugar. Again you could use fresh but I had zero lemons. Dissolve the sugar and keep refrigerated. Making this reminded me of summer days making lemonade from all fresh ingredients with my Mom. At some point I would like to make fresh lemonade again. Not just a ‘whats left in the fridge’ lemonade.

Peel and slice up your cucumbers for juicing! If you don’t have a juicer You could blend them and strain out the pulp. If you don’t have a blender, I don’t know smash them between some rocks. That should do it.

The ratios of all the ingredients really depend on your taste but just combine the lemonade syrup, cucumber juice, and some cold water together. Add some ice! PERFECT! I wanted to take a really cute picture of this cucumber lemonade but all my regular cups were in the dishwasher. Luckily my skull cup is always ready. Also a little side note I got pooped on by a bird taking this picture. Pooped on in my own yard! Luckily this lemonade kept me in a good mood.
