Almond Butter Bars

Recently, I was watching my favourite vlogger – Rhiannon Ashlee Vlogs – who recreated a peanut butter bar recipe from Gina Burgess Nutrition that looked easy and delicious! So I decided to recreate her recreation with almond butter, as I didn’t actually have enough peanut butter to work with.

This was literally as simple as mixing the almond butter, coconut flour, vanilla extract and maple syrup and forming to the bottom of a loaf pan, and melting dark chocolate with coconut oil to pour on top.

Now, since I used almond butter, mine wasn’t as smooth or “wet” as peanut butter, so I fiddled with the measurements until it seemed smooth enough. They were a little difficult to cut up neatly, but they were delicious and done within 30 minutes, so I count them as a win.
